Moringa Egg Omelet
Ingredients:
2 organic egg, gently whisked
1 cup fresh moringa leaves (purchased from Lion Supermarket, San Jose)
Salt, pepper to taste

Directions: Add moringa leaves to egg, pinch of salt and pepper and whisk gently. In a heated pan, add some cooking oil, then pour the egg slowly to form a base with the area of the pan. The wider the pan is, the egg base can be made thinner by swirling the egg around the pan.When the egg starts to cook and form a base, roll the egg up with a wooden spatula.
